
Today, I was reading about Jamie Oliver's new project in Great Britain called the Ministry of Food. (Click the picture above for more info.) It got me inspired to share a new recipe with you. We had these waffles for dinner last night and they threw me headfirst into the Christmas spirit. I can't wait to put my tree up now!
Gingerbread Waffles with White Sauce
The waffle recipe came from my baking bible, the one cookbook I can't do without, Better Homes and Garden's New Baking Book. The white sauce is a family recipe.
1 cup all-purpose flour
3/4 cup whole wheat flour
1 T baking powder
1/2 t salt
1/2 t cinnamon
1/4 t ginger
1/8 t cloves
2 beaten eggs
1 3/4 c milk
1/2 c cooking oil
2 T molasses
In a mixing bowl, combine two flours baking powder, salt and spices. In a separate bowl, combine eggs, milk oil and molasses. Add egg mixture all at once to dry ingredients. Stir just until moistened. Batter will be lumpy.
Pour 1-1 1/2 cups batter onto preheated waffle iron. When done, use fork to remove waffle from iron. Repeat with remaining batter. Serve with white sauce.
White Sauce
3T butter
3T flour
2 cups milk
1/2 cup sugar
pinch of salt
Melt butter in medium saucepan. Add flour and stir to combine. cook flour for a minute or so stirring constantly. Add milk, sugar and salt and stir until thick enough to coat the back of the spoon.
